Vegetable Medley on Crispy Noodles

Another week of Lent ends, and this means “meatless Fridays” for most Filipinos. Fried fish and monggo soup again? Why don’t you try this easy Vegetable Medley on Crispy Noodle recipe. Just fry the noodles, sauté the veggies, and mix in the sauce – voila! You’re good for lunch or merienda. Enjoy! 😋

 

Serves 3-4 persons


Cooking Methods

  1. Quickly deep fry Pancit Canton, set aside
  2. Sautee all Vegetables in Garlic and Onions, add Salt and Pepper to taste
  3. For the Sauce, .Simmer 3 cups Meat Broth or 2 Meat Cubes dissolve in water
  4. Add 3 Tablespoon Soy Sauce
  5. Bring to a boil and add 1/2 cup of All Purpose Flour
  6. Mix well and turn heat to low until thick and lumps disappear
  7. Add in Vegetables Medley and pour over Fried Noodles while hot
